Yummy!



So, when the boys were sick a couple of weeks ago, I was at the Urgent Care here in town with Cole. While we were in the room waiting for the doctor, I started flipping through some magazines. Inside a Better Homes and Gardens magazine, they had a bunch of recipes from a recipe contest they had. The winner got $25,000. Or some large amount like that, im pretty sure that’s how much it was. ANNNYYway, that’s besides the point. Well, sort of. The grand prize winner definitely deserves it. OH! And she was from provo too! I thought it was meant to be. I kind of felt guilty, but I ended up ripping that page out of the magazine from the office because I wanted to try it so bad! And so, I took it with me, and about a week later, I made it. IT WAS HEAVEN…or close to it! So, I thought I would share this DELICIOUS, SCruMpTious, senSATIONAL wholewheat chocolate blueberry cake recipe. Keep in mind, I am not the best cook/baker ever, and this cake turned out awesome if I do say so myself! Here it goes…


Whole Wheat Chocolate-Blueberry Cake
Prep: 35 min. Bake: 30 min. Cool: 1 hour
Oven: 350 degrees

1 cup whole wheat flour
1 cup sugar
6 Tbsp. unsweetened cocoa powder
¾ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
¾ cup water
½ cup fresh blueberries
1 egg
1 cup frozen light whipped dessert topping, thawed
½ cup semisweet chocolate pieces
Fresh blueberries or Blueberry Sauce (see following recipe)

1. Preheat oven to 350 degrees. In medium bowl combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. In blender combine water, blueberries, and the egg. Cover and blend until smooth. Add to flour mixture. Whisk until well combined. Pour into greased 8 x 8 x 2-inch baking pan.

2. Bake 30 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack. Invert onto serving platter.

3. In small microwave-safe bowl combine dessert topping and chocolate pieces. Micro-cook, covered, on 50 percent power (medium) 1 minute. Stir until smooth and chocolate pieces are melted. It will look like chocolate icing now. Let stand 5 minutes. Pour onto cooled cake, spreading evenly.

4. Cut cake into squares to serve. Top with fresh blueberries. Serve with Blueberry Sauce.

MAKES 9 SERVINGS

Blueberry Sauce: In blender, combine ½ cup frozen light whipped dessert topping, thawed, and ½ cup fresh blueberries. Cover and blend until smooth.

SOooooooo, as u can see, this is a recipe rocks. The blueberries that are blended into the cake batter are the butter or oil replacement. And since I LOVE chocolate, I added chocolate chips to the cake batter. Its pretty healthy if ya really take a gander at all of the ingredients! And the icing, is amazing! It really tops the cake! One thing that I wasn’t extremely proud of was the blueberry sauce. I don’t know if it was just me, but it seemed sort of bland. So u should still try it and maybe ull just make it better than me. So after all was said and done, I decorated the top with fresh blueberries. It was really pretty too! Im glad I kifed (sp) the recipe from the doctors office! $50 copay really paid off! : )

I absolutely HAD to put cole in this outfit! It was Tucker's little outfit for the winter my mom got when Tucker was Cole's age. I thought of it the other day and I just had to get a few pictures of Cole in it, and not to mention SNUGGLE with him in it!!! AHHH i could squeeze him to death in it! He is my teddy bear!

Sorry for the picture overload but, i just had to. Well, I am not quite sure if it is just the worst pms i have had in a long time or what, but i have just been an emotional wreck this past week! I have been uber grumpy and not to mention, on the verge of tears all of the time. So, Cole has been taking steps for like 2 weeks or so now, and it has been so exciting. It is amazing how early he is developing! He isn't quite 10 months yet and he is already trying to chase tucker down. We are so proud of his chubby little legs and his sweet little arms sticking out to keep his balance. He is our little acrobat. Anyways, I guess I just haven't really realized what a big step that is until tonight. While Ryan was at Young Men's tonight, i tried to get the boys to sleep and they both just cried for an hour. I tried to let them cry themselves to sleep because i was too exhausted emotionally and physically to deal with it. But when ryan got home, he helped with tucker and then i was able to help cole try to go to sleep. After playing with him for about 20 minutes, i got him to go to sleep. Then I got on the computer and went to babycenter.com to look up birthday party ideas for cole. On the main homepage, there was an article about "Your baby's first steps." So, obviously, it was meant for me to open it. And i did. After reading the first 3 sentences, i was in tears on the couch and then it turned into sobs! Read the first paragraph titled "Walking" http://www.babycenter.com/0_developmental-milestone-walking_6507.bc . I am just overwhelmed at how fast the boys are growing up. I think that that paragraph was too harsh for mothers to read! It was straight up telling me that pretty much my boys are going to be going to college when I wake up in the morning! It pretty much just said, since cole is walking now, he can pack his own lunch and will be riding the bus to school tomorrow because after school he will be going on his mission and then getting married. if that even makes sense. I just sobbed lol. My heart is full with the love i have for my two babies. I love them so much and my heart aches with how fast it goes! All i know is that i am sooo grateful to be sealed to my sweet babies and my hunky husband for eternity! I love them! Ah, after venting, I feel better. : )

New Camera!!!

We went to some fountains downtown the other day. It was so fun! We went with some of our new friends from the ward here in Springfield. The boys loved it, and I think I loved it most because it was FREE! Tucker and Cole both got to splash around and have fun because it wasn't very deep. Sometimes, I think Tuck must be part fish. He LOVES water!

Soo... an explanation of why it has been so long... after losing my THIRD camera since we have been married, I gave up hope, and blogging lol. I find no inspiration to blog if a picture is not included. But... my sweet hubby got me a new camera for my birthday! I am so grateful for a loving husband who puts up with my sometimes pathetic brain. So, now I will be able to record memories again! YAY!



Now for a quick briefing, life is flying by! Ryan and I both graduated in April from Brigham Young University. Ryan majored in Food Industry Management and I majored in Exercise Science with an emphasis on Fitness and Wellness. Ryan is working for his dad so we are here in Missouri now. I am a stay-at-home mom and I am loving it!!! I love getting to spend the day with my boys. It can be pretty difficult with tantrums and messes, but it is totally worth it.



Tucker turned 3 years old!! Some pictures of his birthday will be posted as soon as I can get them from my in-laws computer. He is such an awesome little boy. I have loved every day I have been blessed to be with him. He is getting to be a handful these days, but I am sure they will be fun memories to look back on. He is saying some pretty crazy/funny things lately as well! Yesterday, he chuckled as he exclaimed at lunch that he had boobs on "the back of him!" I figured out he was talking about his shoulder blades lol. I laughed so hard! And then today he said he had to poo and it was going to grow bigger and stronger! lol he is a boy alright! He is such an amazing brother to Cole. They have such a sweet connection together. Tucker loves cars still, drawing, painting, playing with chalk outside, and playing with Cole. He has kinda been freaking me out with his new found love for baths! He requests at least 3 or 4 every day now that I found his bath toys in a box.

Cole... where to begin!! He is growing up! He has been crawling since 7 months, and now, he is almost 10 months and can take 10 steps at a time! (but he still prefers crawling) He has his two bottom front teeth and he looks so stinkin cute. He is sooo strong and full of energy! He an tucker wrestle like 24/7. At first, I was worried that tucker would smash cole to smitherines (is that a word? is that how you spell it lol)... but now cole is totallllly a fighter! he will wrestle with tuck like he is calf roping! He will wiggle and just pull tuck down after tucker has been teasing him for a while. They are awesome.
